My Pilkington ancestors come from the Adlington area too.
I have a 'Mary' on my database that could be the one you're looking for. She was christened at Rivington in 1850 (nearby village) and was the daughter of Ralph Pilkington aand Isobel Simm.
I belong to an MSN contact Group for the Pilkington name. It's on http://groups.msn.com/Pilkington, and there are several of us whose ancestors come from villages in or near Adlington in Lancashire. We might be able to help you out. Also have a look at http://www.martin.pilkington.btinternet.co.uk/genealogy/gen_hp.htm - Martin's ancestors are from Adlington, and also
