In the 1900 census Laura Ann Carpenter Burrow(s) stated she was b in Dec 1861. It may or may not be correct but is consistent with the info on the death cert, at least. In all available censuses, she states that she, her mother and father were b in MS. The death cert is the only inconsistency there.

We don't know who Mr. Carpenter is but just to stir the pot, in the 1850 census of Yalobusha County, MS, north of the Yallobusha river, lives H Carpenter and family, one of whom is William Carpenter, b about 1839 in MS. He is on p 445 of the census and the John Bounds family (with daughter Juliana Bounds, Laura's mother) begins on p 444; so they don't live that far apart. That doesn't prove anything, just adds some intrigue, and I haven't yet found any other info. Thinking that Laura's brother, William, may have been named after their father. This may be totally on the wrong track, but who knows...?

There apparently is or was a marriage record for S C parker and Juley Ann Carpenter (1868) as the source info on Ancestry states info for the database was taken from county courthouses, although I thought the AR Counties weren't supposed to have anything that far back.
